My Pro Tipp for 2025. Real world: color. Phone: greyscale. And ads lose their punch, too. I set up a short cut (press Power button three times) to toggle color on for when I want to watch a video.
I think a great UI would be all monochrome, with color used when it's really needed ( like green Yes button, red No button ) or ( as you noted ) for videos.
